The Fruit & Terroir

The Quince holds a deep rooted and cherished place in our local heritage. While the raw fruit is firm and tart, it is renowned for its intoxicating fragrance. We handpick only the finest quinces from the sun drenched orchards of Kulina, where mineral rich soils and abundant sunlight enhance the fruit’s natural essential oils and vibrant acidity. 

While quince is challenging to process, its distillation rewards us with rich, distinctive aromas and complex flavours. This careful craft brings out the fruit’s unique character, creating a rakija that is truly exceptional.

Varietals

Harvest begins when the quinces develop a deep golden hue and release their unmistakable, lush fragrance. At this peak stage, natural enzymes activate the release of aromatic compounds such as ethyl cinnamate and ionones, which contribute delicate floral and subtly woody notes. While the flesh remains firm and dry, the peel becomes intensely fragrant, signalling the fruit has reached its aromatic prime, ideal for distillation. As quince naturally contains low levels of sugar, a small amount is added during fermentation to help preserve its complex bouquet and maintain depth in the final spirit.

The fragrant quince fruit has been gifted for centuries as a sign of friendship and respect towards the host, often accompanied by quince rakija. This symbolic and valued fruit is a traditional token of goodwill. The resilient and sturdy quince trees are an indispensable part of Kulina orchards.

Distillation

Our quince rakija is crafted through traditional double distillation in copper stills, gently heated by a wood fire. We carefully extract only the purest and most aromatic “heart” of the fruit, rich in delicate esters and essential oils. 

This meticulous, time honoured process produces a rakija of exceptional clarity, delivering a fragrant and perfumed character that faithfully captures the quince’s natural essence.

Unaged Quince Character

Bright and intensely aromatic, our unaged Korijen Quince rakija beautifully captures the fresh essence of quince peel, with subtle and delicate floral perfume. Its light body and crisp dry profile, offer a tasting experience that is both nostalgically charming and elegantly modern. This spirit is crafted for those who value refined complexity, pure flavours, and a striking aromatic character.

Carefully matured in Slavonian oak barrels, our barrique quince brandy develops a graceful warmth and silky texture while keeping the vibrant fruit character at its heart. Gentle oxidation brings refined woody layers, nurturing aromas of ripe quince and floral perfume, a hint of honey and vanilla, harmonising with the quince’s natural tartness.
