The Fruit & Terroir

Crafted from a blend of carefully selected Jonagold, Idared, and local heirloom varieties, our apple rakija reflects the essence of Kulina’s mineral rich soil and sun drenched orchards. 

This harmonious mix yields a rakija with an ideal balance of natural sweetness, crisp acidity, and vibrant freshness, invigorating on the palate and elegantly composed in character.

Varietals

Apples are hand picked at full maturity, when they are firm, fragrant, and rich in flavour. Jonagold lends soft floral notes and sweetness, while Idared adds a bright, refreshing acidity. The native varieties introduce subtle spice and complexity. Together, they create a balanced and harmonious rakija with layered character.

Domestic apple varieties have well-branched and sunlit crowns, while international varieties are more vigorous and require frequent pruning. Well-maintained fruit trees can live for over 70 years, but they produce the most flavorful fruit for rakija up to 30 years of age. Apple trunks are sturdy, and their growth rings tell the story of the cycles of Kulina’s springs and autumns.

Distillation

Through meticulous double distillation, we isolate only the purest and most aromatic heart of the spirit, carefully removing any harsh notes. Apple rakija requires particular finesse, precise temperature control and expert knowledge to retain the fruit’s naturally bright acidity and nuanced aromas. 

The result is a rakija that is clean and fragrant, with vivid notes of apple and a refreshing subtly tart finish that reflects both the purity of the fruit and the mastery of its distillation.

Unaged Apple Character

Bright, clean, and refreshingly crisp, the unaged apple rakija captures the pure essence of freshly harvested apples. Its lively acidity is balanced with a gentle warmth that lingers on the finish. Vibrant and aromatic, this expression shines both neat and as a sophisticated base for cocktails. It also pairs beautifully with cheese, charcuterie, and seasonal fruits, enhancing their natural flavours.

Carefully matured between 6 to 12 months in lightly charred Slavonian oak barrels, apple rakija develops added complexity and silkiness. The slow maturation mellows the rakijas’ acidity, unveiling layered notes of baked apple, creamy vanilla, and rich caramel. The result is a harmonious and refined spirit smooth and inviting, with a warm, lingering finish that celebrates both tradition and craftsmanship.
